After three and a half years and countless samples, Steve and Senor Sanchez have created the world’s first Hi/Lo blend of tequila. In 2019 Costa Tequila’s award-winning products were introduced to the market and are widely believed to be some of the best in the world. We’re here to show that through his unity of two different cultures, we are able to make something that is true, simple, and remarkably delicious.
Costa is known for their “hi-low” blend, which combines the traditions of the highlands and the lowlands of Jalisco. Los Altos, in the Highlands, grows a softer, fruitier agave while Valle de Tequila, in the lowlands, grows an earthier, peppery, and herbal agave with a silky texture. The agave from both of these regions is cooked for 55 hours together in a traditional brick oven. This is followed by a slow fermentation process lasting 2 to 3 days, creating a full-bodied tequila. The ferment is twice distilled in large copper pot stills. The reposado is then rested for 8 months, creating notes of caramel and vanilla to compliment the agave flavors.
Aged for eight months in American Oak Barrels, this award-winning Tequila has hints of caramel and vanilla with a subtle peppery finish. Its balanced and more complex flavor profile makes our signature HI/LO ™ blend truly memorable.
