Description
This chalky, calcium-carbonate rich terroir is evident in the 2018 vintage’s heightened minerality. Rested for 2 years prior to release, the aromatics are complex and wondrous. You’ll find pure roasted agave and sweet, cooked yams laced with warm baking spices and tropical fruit. On the palate the roasted agave and spice notes frame accenting flavors of fresh papaya, black pepper, a touch of coriander, and a wisp of citrus. No additives!
